Our Fourth Pizza

It has been a while since we have done a pizza post. Now don’t get me wrong, that does not mean we have not made any. A little over a month ago my American cousin visited and we made pizza for her, my good friend and her toddler son. They requested combinations that were already posted. We had one new combination, which is the vegetarian side featured here.

This weekend was a lazy one. No complicated cooking, just something nice and easy. Saturday night became pizza and movie night. We decided we would revisit the Vegetarian Pizza that we made for my cousin.

 

TOPPINGS
Meat Both Sides Vegetarian
Pepperoni Tomato Sauce Tomatoes, sliced thinly
Duxelles Parmesan Garlic Sautéed Spinach
Basil, chiffonade 1 cup Mozzarella, shredded Shallots, finely diced

 

Method

1. Marinate tomatoes in olive oil for 30 minutes.

2. Using our pizza dough recipe, roll out half the dough to approximately 12-14 inches.

3. Apply a thin layer of pizza sauce and lightly sprinkle with Parmesan cheese

4. Apply mozzarella cheese to the entire pizza.

5. On the MEAT side evenly distribute Pepperoni.

6. On the VEGETARIAN side place tomatoes, spinach and top with shallots.

7. Bake pizza as explained in our Gourmet Pizza at Home post.

8. When pizza is finished remove from oven and place basil and duxelles on the MEAT side.

9. Let sit for 5 minutes before cutting.
